A luscious coconut and jaggery stuffing that melts in your mouth — the perfect partner for traditional Kozhukattai!
Ingredients
- 1 cup fresh grated coconut
- ¾ cup jaggery (use the same cup measurement)
- 1 tsp cardamom powder
- 1 tsp ghee

Step 1: Cook the Coconut and Jaggery Together
- In a kadai, add the grated coconut and jaggery together.
- Cook on low flame, stirring continuously.
- The jaggery will slowly melt and combine with the coconut.
- As the mixture cooks, the coconut will get cooked well and the mixture will gradually start to thicken.
💡 Tip: Cooking on low flame is important. It allows the jaggery to melt slowly while the coconut cooks without the mixture sticking or burning.
Step 2: Cook Until Thick
- Continue cooking on low flame, stirring regularly.
- The coconut will absorb the melted jaggery and the mixture will become thick and glossy.
- Keep cooking until the mixture starts leaving the sides of the kadai.
Step 3: Add Cardamom and Ghee
- Add cardamom powder and mix well.
- Add ghee and continue mixing for another 1–2 minutes.
- The stuffing should come together as a soft, thick mixture.
Step 4: Check for Doneness
- Take a small portion of the mixture and let it cool slightly.
- Try rolling it between your fingers into a small ball.
- If it holds its shape without becoming too sticky, the stuffing is ready.
- Do not overcook, as the stuffing will become hard after cooling.
Step 5: Cool and Shape
- Transfer the stuffing to a plate and allow it to cool completely.
- Roll into small balls and keep aside.
- Shape the balls just before stuffing the Kozhukattai.
💡 Tip: The stuffing thickens further as it cools, so remove it from the flame while it is still slightly so
